Summertime Barbecues

I'm Dr. David Vastola and Patrick's got his lucky outfit on - he always wears it when there's a gamble - when he goes to Las Vegas, when he's bowling and betting - it's good luck to him. But I bet you wouldn't believe that grilling your food was also a gamble. Especially this: meat, it's a gamble for both you and your family with serious consequences. Let me tell you what they are.

When it comes time to put the meat on the grill, this is what you need to consider. The high temperatures generated here in the meat cause cancer chemicals - they're called hexosimines. And if you eat them in excess, or over a period of time, they can cause cancer. But there are some rules you can follow.

First of all, of you're going to grill outside generally do it for the vegetables only. but if you're going to use it for meat, make sure it's lean meat and trim the fat off first. Even better yet, marinate it before you cook it, that will decrease the amounts of the hexosimines. or precook it - that will decrease the cooking time. Also, try not to use mesquite. i know it's in fashion, in vogue, but don't use it because the mesquite will increase the cooking temperatures and increase the cancer-causing material. Also avoid the charred areas of the meat like the ends. lastly, don't breath the smoke in, because guess what? They're in the smoke too and can get into your body that way.

The bottom line when grilling is to take that hit, whether it be in cooking your meat and grilling it or taking a hit in black jack. 21! Patrick wins again.
