Chicken Scampi Pasta
Serves 4

Ingredients:

1 Tablespoon butter

2 tablespoon olive oil

1 tablespoon garlic, minced

1/3 cup slivered Sundried tomatoes, packed in oil

1 cup fresh tomato, diced

½ cup chicken broth

1/3-1/2 cup dry white wine

¼ cup basil, sliced thin

1 package Tyson grilled and ready to eat Chicken strips

8 ounces fresh mozzarella, cubed

1 package Barilla Piccolini bowtie pasta

salt, to taste

Parmesan Cheese, grated, optional

Directions:

Boil water and cook pasta according to directions on box.

While the pasta is cooking, heat a saute pan and add the olive oil and butter.  Once butter has melted, but not browned, add the garlic.  Cook for 1 minute to release the fragrance.  Do not burn or brown the garlic.  Add the chicken strips, sundried tomatoes and fresh tomatoes.  Stir over medium heat for 3 minutes until heated.  Add the broth and wine and simmer for 2 minutes.  Once the mixture is fully heated, add the fresh mozzarella and basil.  Toss with the pasta and season with salt.  Stir together over the heat for a few minutes to let the pasta coat with the sauce.  Serve with crusty Italian bread and a salad for a complete meal.  Sprinkle with fresh parmesan cheese if desired.
