Chef Pantone remixes popular dips to make them healthy

WEST PALM BEACH, FL (WFLX) - There are many, many wonderful recipes and variations of the popular tasty dip.  But every one of them is full of fat and high in calories.  That's what creates the smooth, creamy texture that we all love!  It would be easy to substitute those ingredients with fat-free cream cheese and fat-free sour cream.  But those things don't taste good.  My thought for this ReMix is to deconstruct the dish completely and then to reconstruct it in a healthy and flavorful manner.  So it won't be the same, it will be better!

The magic ingredient in the new recipe is Hummus.  This delicious dip is used as an ingredient here.  It is rich, and smooth, and very flavorful, and more healthy.  It is made from chickpeas, tahini (ground sesame seeds), garlic, and lemon juice(other tasty ingredients are optional).  

I ReMixed the dish and came up with three different versions.  ReMix #1 uses some cream cheese and some hummus.  It has great tastes and less calories and fat than the original.  ReMix #2 use substitutes hummus in place of all of the fatty ingredients (cream cheese, mayonnaise, and sour cream).  It has great taste and even less fat and calories.  ReMix #3 is simply AMAZING.  It is a completely new dish, nothing like the original.  Fresh, fruity, zesty, and Amazing!

Too each recipe, you decide how much salt and pepper you like to add and you can even add your favorite hot sauce to kick it up a notch!  Each tastes great fresh and cold or cooked and hot.  Serve with your favorite whole grain crackers.

Normal recipe has about 64 calories per 4 Tablespoon serving and 5.9 grams of fat.
ReMix #1 has about 33 calories per 4 Tablespoon serving and 1.7 grams of fat.
ReMix #2 has about 30 calories per 4 Tablespoon serving and 1.4 grams of fat.
Total Awesomeness Remix #3 has about 32 calories per 4 Tablespoon serving and 1grams of fat.

ReMix #1 – Crab, Spinach, and Artichoke Dip - about 33 calories per 4 Tablespoon serving and 1.7 grams of fat.

1 – 10 ounce package of frozen, chopped, spinach – thaw and squeeze out excess water
1 – 8 ounce package of low fat cream cheese
1 cup Hummus, original flavor
½ cup shredded Parmesan cheese
1 – 14 ounce can of artichoke hearts – cut into chunks
1 – 8 ounce package of lump crabmeat
Grated zest and juice of ½ lemon
1 teaspoon chopped fresh chives
Salt, Pepper, Garlic Powder and Hot Sauce to taste.

Mix all ingredients together. Taste. Adjust seasoning to taste.  Place into an appropriate sized casserole.  Bake at 375® for 20 minutes until light brown on top.  OR enjoy cold!

ReMix #3 – Awesome Tropical Crab Dip - about 32 calories per 4 Tablespoon serving and 1grams of fat.

2 cups Hummus, original flavor
2 cups Mango Salsa with Red Pepper & Cilantro
2 ribs of celery, diced small
½ cup mini sweet peppers, diced small
3 scallions sliced thin
Grated zest and juice of ½ lime
1 teaspoon chopped fresh chives
1 – 8 ounce package of lump crabmeat
Salt, Pepper, and Hot Sauce to taste.

Mix all ingredients together. Taste. Adjust seasoning to taste.  Place into an appropriate sized casserole.  Enjoy it cold!  Or bake at 375® for 20 minutes until light brown on top.
