Food truck invades Fox 29 Morning News

WEST PALM BEACH, FL (WFLX) - On the second Friday of every month, gourmet food trucks from all over south Florida gather for the Food Truck Invasion at Abacoa in Jupiter.

On Friday, the trucks line up at the Abacoa Town Center on Town Center Drive & Crescent Drive from 5:30 p.m. until 10 p.m.

The mobile kitchens offer everything from cupcakes to Asian fusion tater tots.

Matthew Somsy with Curbside Gourmet visited Fox 29 Morning News, to talk about the growing food truck trend.

Somsy also shared the recipe for one of Curbside Gourmet's most popular items, Buttermilk Fried Chicken Sandwich with Balsamic Mustard.

Recipe for Curbside Gourmet Buttermilk Fried Chicken Sandwich with Balsamic Mustard:

•Use free-range all natural chicken breasts.

Soak the chicken breast over night in buttermilk with a pinch of paprika, salt, and fresh cracked pepper.

Dredging Flour:
•2c of flour mixture (Wondra and all purpose flour)
•Course salt a generous pinch
•Fresh cracked pepper
•1tbs of garlic powder

Coat the chicken breast completely in the flour batter, shake off any excess flour. Deep fry in 325 degree oil for 5-7 minutes or until the chicken is floating in the oil.

Balsamic Mustard:
• 1c Mayo
• 1/2c Dijon Mustard
• 1/3c of balsamic vinegar (or add until its a medium brown color)

Toast a potato roll, add bib lettuce and heirloom tomato slices.
