Lobster Cavatelli Pasta Recipe

Lobster Cavatelli Pasta:

8 oz Ricotta Cavatelli (or short noodle pasta) cooked

1 tbsp unsalted butter

1 tsp minced shallots

3/4 c sliced mushrooms

3 oz Sherry Wine

4 oz lobster Stock

2 oz Heavy cream

6 oz Lobster meat (claw and Tail)

1 tsp chopped parsley

1 tsp chopped fresh tarragon

Directions:

In a large sauté pan sauté the butter, shallots and mushrooms until lightly browned. Deglaze with sherry wine and reduce by half. Add stock, cream and lobster meat and reduce for 3-4 minutes until sauce thickens slightly. Add fresh herbs and pasta. Stir until pasta is hot and serve. Makes 2-4 servings
