Avocado Grill Sweet Potato Crusted Mahi

Avocado Grill Sweet Potato Crusted Mahi

Ingredients:

8 oz filet of mahi mahi 

2 tbsp of shredded coconut 

2 tbsp of grated sweet potato 

1 egg beaten 

2 tbsp canola oil 

Salt +Pepper 

Peel a small sweet potato and place in a pot with enough water to cover the potato and boil for approx. 15 min or until soft. Once soft, drain and let cool.

When cool mash 2 tbsp of the sweet potato and mix with shredded coconut. Set aside.

Season the fish with the salt and pepper. Brush with eggwash  (beaten egg) and cover with coconut sweet potato mixture.

In a non-stick sauté pan add canola oil and heat. Once hot, place fish crust side down and lightly brown. Once browned, flip the fish over and place in a baking dish. Bake in a 350 degree preheated oven for 10 minutes.

Once fish is done you can serve on top of a salad of your choice!
