Sausage Napoli recipe from Brio

Sausage Napoli

1/2 oz ladle Blended Oil

3 oz portion Sausage, baked, sliced 

2 ea 2 oz spoodles Crimini Mushrooms, sliced

1/2 tsp Garlic, chopped

2 ea 1 oz spoodles Charred Tomato Sauce

1.5 oz ladle Bercy

2 oz ladle Alfredo Sauce

2 oz spoodle Tomatoes. Diced

1 oz spoodle Parmesan/Romano Blend

1/4 tsp Salt and Pepper Mix 

#60 scoop Herb Butter 6 oz portion

6 oz portion Spaghettini

1 oz Spinach 

1 Tbsp Ravioli Crumbs

Method: Heat oil in a saute pan. Add sausage and sear. Add mushrooms and sear. Add galic and saute. Add charred tomato sauce, bercy and alfredo. Bring to a simmer. Add tomatoes and parm/romano, toss to combine. Season with salt and pepper. Add herb butter and stir to incorporate. Heat pasta in boiling water. Drain and add to pan, along with spinach. Place in a pasta bowl, piled high in the center. Garnish with ravioli crumbs.
