Rebel House Char Sui BBQ Lamb Spare Ribs

For the Ribs:

2 Racks Lamb Ribs

2 Pieces Chinese Fermented Bean Curd

1 tbsp Maltose (honey is a good substitution)
1 tbsp Chinese Shaoxing Wine
1 tbsp Soy Sauce

1 tbsp Oyster Sauce
1 tsp Dark and Thick Soy Sauce
1 tsp Five-Spice Powder
¼ tsp White Pepper Powder
8 ½ tbsp Sugar

Directions: Take all ingredients, excluding lamb and put in blender. Blend until smooth.

Coat lamb with marinade, leaving ½ cup aside.

Let lamb marinade for 24 hours.

After 24 hours, put ribs on a sheet tray and place in 200 degree oven for about 4 hours. At the 3 hour mark, coat the ribs with the reserved marinade.

Spicy Radish:

1 Bag of Radishes (shaved thin on a mandolin)

1 Bunch of Scallions (sliced thin)

1 tbsp Garlic Chili Sauce

1 tsp Sesame Oil

2 Limes (juiced)

1 tbsp Extra Virgin Olive Oil

½ tsp Toasted Sesame Seeds

1 Orange (juiced)

1 tsp Soy Sauce

Directions: Mix all ingredients together in a bowl, season with salt and pepper.

Garnish ribs with fresh orange segments, fried garlic and a little cilantro.

You can find fried garlic at any local Asian market.
