Achiote Spiced Lamb with corn & radish salad recipe

Ingredients: 

1 baby lamb rack

1Ž4 c of spice mix (brown sugar, achiote, aji Amarillo, ancho chile, salt, smoked paprika)

3 radish

1 ear of yellow corn

1 sprig of cilantro or frilly cilantro

1 scallion

4 baby heirloom tomato

Kosher salt

Juice of half a lime

Extra virgin olive oil

Directions: 

Heat cast iron frying pan with 1 tsp of olive oil.

Season lamb rack with spice mix then place in hot frying pan. Sear for 4 min then flip.

While lamb is cooking. Chop radish, corn, cilantro, scallion, and tomato. Top with salt and lime juice.

After you flip the lamb, add in vegetable mix to pan and cook for 4 min.

Once finished, plate and enjoy!
