Food for thought from renowned Chef Daniel Boulud

PALM BEACH, FL (WFLX) - When it comes to restaurant reviews, Daniel Boulud knows what it takes to receive stars. His restaurant, Daniel, is one of only five Manhattan restaurants to have the New York Time's coveted 4-star rating.

"I think the most important thing with this restaurant is we have always believed in quality and only finest quality," said Chef Daniel Boulud.

Boulud then branched out opening three more restaurants in NYC and four outside the Big Apple. Three in vivacious metropolitan areas - Las Vegas, Vancouver and Beijing - and one nestled in a quaint town, a place where people go to get away from city life.

"Palm Beach is very special. I would have not gone in a shopping mall because it was Palm Beach. No, I think, I fell in love with the place."

The place he's talking about is the Brazilian Court, a vacation spot known for its rich history, architecture, guest and, of course, Daniel Boulud's restaurant, Cafe Boulud.

But he is the first to admit, "So, maybe my name is associated with quality, and, I think, service is very important and creativity, of course, but that doesn't mean expensive. "

In fact, he's opening his 10th restaurant in New York. "It's going to be on beer and sausage, so it's like down to the totem pole of dining, but it's going to be so good."

Sounds a bit rustic, but, Boulud says, he doesn't need caviar.

When asked if he could only eat one food for the rest of his life, he responded, "It could be a very humble and simple ingredient. I mean, with the potato, I can do, I don't know, 200 recipes with potatoes."

I asked him what he thinks about Fox's "Hell's Kitchen". "It's good. I think it's good because people are entertained by what we do. I mean, I've been living in 'hell kitchen' for many, many decades."

But he's quick to add, "In my organization, we do respect our staff. We do challenge them. We train them. You want to mentor your staff; you want to take care of them. And, really, they're a part or you."

Some food for thought from one wise chef.
